I bought a Magic Jack Plus last night which I have connected, via Ethernet cable, directly to my Motorola SBG6580 wireless cable modem. My highspeed internet provider is Comcast (XFINITY Performance service).

I can send and receive calls with the Magic Jack Plus, but have one annoying issue...every time the Magic Plus is in use, my WiFi network stops working (i.e., iPad and Blackberry can no longer see/access the network). The problem starts as soon as the MJ+ is being used and, within a few seconds of hanging up the phone, suddenly the WiFi network comes back up and my wireless devices reconnect.

I'm not sure where to start with troubleshooting this. I have fast internet service and the SBG6580 is Wireless-N, so should be plenty of bandwidth. Any help would be greatly appreciated.

I bet you are using a 2.4 mhz cordless phone. This is the same freq as your wireless router and it is causing it to cut off.
You can try changing the channel of your router ( it is probably set to auto) or get a 5.8GHZ or a DECT 6.0 cordless phone and your problems will go away.
