Setting the proxy server setting on a softphone

Question - when setting up a softphone with your MJ credentials, do you have to use the proxy server that was specified in your MJ dump or can you use any of the MJ sites?

I have two MJs, one comes up as registering with the Seattle proxy, one comes up at Nashville. Can I use the one that is closest to me for both so I have reduced latency, or is each one assigned to a particular proxy server and you can't change it?
