My experience is that the Jawbone Bluetooth earpiece is the best for removing ambient noise. Believe it or not, this is because it is not a noise canceling device in the strictest sense of the word.
The Jawbone places a sensor on your jaw and then only allows ambient sounds that are coincidental with your jaw's vibration (only your own voice) to enter the microphone.
You can test this philosophy before you buy very simply. Start a phone call using your current headset or handset. While listening to the other person talk, alternately place your finger in your other ear and over the microphone sensor. You should recognize that you kill more distracting sound by muting your own microphone than by trying to shut out the sounds coming into your other ear.
There are only two potential drawbacks I can see in your environment. First, this is an in-the-ear device, so it may be tiring if you need to use it for many hours each day. Second, it is battery powered, so you will only be able to talk for several hours at a time before it needs a charge.
